King, 21, finished his first GP2 campaign in 12th last year, securing a maiden podium at Spa-Francorchamps in a 1-2 with Alexander Rossi.
Earlier in his career, King was runner-up to Jake Dennis in Formula Renault 2.0 NEC and won the title in the now-defunct British F3 series.
"It felt right to stay with [Racing Engineering]," said the Manor junior. "I have built up a good relationship with the guys and I think keeping continuity is worth a lot in any junior championship - especially in a year in which I will be going for the championship.
"I know the team will be fully behind me to make that happen and will put out all the stops to give it their best shot."
Racing Engineering finished either third or fourth in the teams' standings in each GP2 season since 2008 - and took Giorgio Pantano and Fabio Leimer to drivers' titles.
"'After the great results Jordan had for a rookie and the hard work he put into 2015, it is with great pleasure that I can announce that we will work again together in 2016," said team boss Alfonso de Orleans-Borbon.
"Jordan has the talent and the work ethic to go for the championship this season. Let's continue what we started last year and get the results we are all expecting."
