Mostert spent most of the 30-minute session near the top of the times, but it took a last-minute run on a fresh set of hard tyres for the Prodrive Racing Australia driver to grab P1 with a 1m13.252s.
That time dropped Percat to second, the LD Motorsport driver having gone fastest four minutes from the end with a 1m13.307s on the softer compound Dunlops.
FP2 pace-setter Will Davison was a very late improver for Erebus, making up 18 spots on his final timed lap to go third fastest for Erebus.
The top three were covered by just 0.069s.
Points leader Mark Winterbottom was fourth fastest, while Fabian Coulthard jumped from 20th to fourth on his final lap, dropping fellow Kiwi Andre Heimgartner to sixth.
Shane van Gisbergen finally managed to bank some track time after missing out on all of the second session. With the vibration issue sorted, van Gisbergen was able to go seventh fastest, ahead of Scott McLaughlin.
While Craig Lowndes managed to sneak into the Top 10 with the 10th fastest time, his team-mate Jamie Whincup continued to struggle with just the 15th fastest time.
Rick Kelly caused the only red flag of the session, his Nissan Altima grinding to a halt on track 12 minutes into the session thanks to a problem with his lightly upgraded engine. The Jack Daniel’s Racing driver will be forced to revert back to the engine that he used at the last round in Darwin.
